Sausage & Veggie “Fried” Quinoa

Stir fry is probably one of my favorite meals to make and eat. It’s so easy – dump a bunch of veggies in a pan, add some soy sauce then enjoy for the next four days.

There’s not much to say about this, other than it is delicious and amazing and SO filling. Also lots of detoxing things in there for you – kale, cabbage, quinoa. And it’s quicker to make than to order take out. You can take out the chicken sausage if you don’t eat meat or sub in any other protein you want.

Sausage & Veggie “Fried” Quinoa

What you’ll need:
2 cups cooked quinoa
2 chicken sausage links, sliced
2 cups kale, finely chopped
1 cup cabbage, chopped
1 cup baby bella mushrooms
1 red pepper, diced
1 bag frozen peas, defrosted
2 tbsp olive oil
2 tbsp soy sauce
2 cloves garlic

Optional toppings:
Sriracha sauce (I honestly use Trader Joe’s brand because the real stuff has a ton of chemicals. Ew.)
Fried egg

What to do:
Put olive oil and garlic into a heated wok. Let garlic cook for one minute until fragrant.
Add chicken sausage, pepper and mushrooms and cook for 5-6 minutes until they start to become tender.
Throw in defrosted peas, kale, and cabbage. Let cook for 5-6 minutes, stirring occasionally.
Add soy sauce and quinoa. Keep cooking for another 4-5 minutes until quinoa is warm and everything is cooked through.
Top with fried egg and sriracha sauce. Enjoy!

  1. I made something very similar for those nights when I don’t have the ingredients or the patience to make something extravagant! My parents brought back 10 packages of TJs sausages for me when they road tripped to cleveland so I hoard those for this kind of meal. So easy!
